About Avakya:

This is a very traditional South Indian Andhra Special telugu pickle .
It is made with Raw Sour Mangoes. 
If the raw mangoes are not Sour, its better not to prepare the avakaya pickle. 

Generally this pickle is prepared in every household of Andhra Pradesh , India in the months of April to May and stored in big containers to be used through out the next year, as a side dish like a chutney with Breakfast / Fastfoods / Lunch or dinner with White rice adding a pinch of Ghee or Oil.

Ingredients

1) 6 Raw sour mangoes - cut in small pieces as shown in video below

2) Salt - 80% of 1 glass/ 1 cup
3) Red Chilli powder - 1 and half Glass / 1 and half Cup
4) Mustard seeds powder - 1 and half Glass / 1 and half Cup
5) Sesame seed Oil - 1 and half Glass / 1 and half Cup

Avakaya Receipe Method:


  1. Mix Salt, Mustard Seeds powder, Red Chilli Powder in a large plate as shown in video.      Note: If you are mixing the ingredients with your bare hands, please be careful as the hot chilli powder will make your hands feel burning sensation later, even after washing with your hands. Please wash your hands atleast 5 times with soap.





2. Next , Add oil to the whole mixture of spices slowly about half of the oil first



and mix them well as below.

3. Next,  add the mango pieces onto the mixture of spices as below


4. Next add the remaining oil and mix the whole ingredients with hand or spoon well.
Mix them very well so that all the mango pieces are mixed well with the spices mixture/gravy as below.




5.  Just taste the spices gravy and feel if it is tasting good or not.

Tips: 
If you feel less or more salty, dont add any more salt right now
 Because the salt gets observed by the mango pieces in 1-2 days so you will not feel any more salty.
If you feel the mixture/gravy is less spicy, add 5 more spoons of red chilli powder.

Now pour some oil about, 5 spoons of oil in the base of a vessel you are about to store the pickle.
Then on top of the oil content, transfer the mixed mango pickle to the storage container as below.


6. Ensure the storage container is tightly closed with lid.
Keep aside and after 1 hour mix the contents of the jar again with spoon,
Ensure you dont put a wet spoon or touch with wet hands.
After mixing well, close the jar with lid tightly again and leave aside.

7.  The pickle is ready to taste after 1 hour along with hot white rice with some oil.
or you can start using from the next day.
